What's for dinner Wednesday

It was a bit rainy and cool here this morning, which made me a little hungry for some nice, warm soup. One of my favorite things to make on days like today is crock pot soup. My stepmom used to make this all the time, and I love it. It is also great for days when you are busy as it is mostly a "dump" soup. You dump in a bunch of stuff and you are done.

What you need:
1 1/2 lbs. ground beef, browned and drained
1 med. onion, diced
3 cans minestrone soup
2 cans Ranch Style beans
1 can diced tomatoes
1 can Ro-tel tomatoes
1/2 c. egg noodles

What you do:
After browning the meat, put everything (except the noodles) in a crock pot. Cook on low 4-8 hours. Add 1/2 cup egg noodles in the last 20 minutes before serving. The cooking time is not extremely important, as you are really just heating the ingredients, not cooking them. The soup is ready when you are.

Variations:
You can also make this on the stove top if you want to. It tastes the same. Just simmer everything together, add the noodles and cook until they are done.

You may need to add a little broth or water if the soup is too thick. I, personally, like it thick.

You can leave out the noodles. They just make the soup thicker (a bit goulash-y).

I serve this with sour cream and grated cheese on top because that combo makes everything so yummy.

This soup makes awesome leftovers. If fact, I hear of stories that some people make it the day before *gasp* on purpose.
